Longtime fans of 3sixteen will know that we’ve held a deep love of coffee for over a decade. The brand has given us opportunities to build relationships with some really incredible people in the coffee industry; through them, we have discovered the crossover between the work we do and the level of care that goes into carefully sourcing, roasting, preparing and presenting coffee at a high level. We also find third wave cafes to be one of the best ways to experience a city during our work travels around the world. As we began to dream up projects to celebrate our 20th Anniversary this year, we knew that a pop-up café was in order. Wilsons is an homage to a friend gone too soon who was responsible for introducing Andrew to the world of considered coffee. It’s also the fulfillment of a longtime dream to - for a little bit of time, at least - explore serving coffee our way.

For one month, we will be highlighting weekly special single origin roasts from some of our favorite roasters from around the country: Sightglass (SF), Greenway (HTX), Portrait (ATL), and Go Get Em Tiger (LA). These beans are all roasted specifically for our cafe and will also be available in custom retail bags for purchase. Alongside coffee and espresso drinks, we will be presenting pastries from our friends and neighbors at Potluck Club as well as two signature drinks celebrating Andrew & Johan’s Chinese and Vietnamese heritage.

We reached out to Go Get Em Tiger’s former Director of Cafe Experience, Jaymie Lao, for her café opening expertise to help bring the concept and space to life. Jaymie has been a friend to us since her early days of serving coffee at Intelligentsia Venice and we’ve always admired the kind of atmosphere she has cultivated wherever she’s served. Jaymie designed the buildout, secured equipment, developed drink recipes, and established service standards. We could not have executed the Wilson’s vision without her.

The branding and visuals for the cafe come from Studio Mast in Denver, who were responsible for our rebrand several years ago along with countless other design projects along the way. Over the past 9 months, Travis and his team worked on a logo that would call back to old NYC diners combined with a design system that also looks ahead, encapsulating the forward thinking service that we hope to provide. We loved the branding so much that we’ve made limited runs of t-shirts and hand embroidered shop jackets and coveralls adorned with the logo.

The cafe is located inside our NY flagship store at 190 Elizabeth Street in Nolita. This storefront has been home to 3sixteen for three years now and has slowly become more than just a place to buy our clothing. We’ve always prided ourselves on providing top-notch service and building intentional relationships with the people who come through our doors; in truth, we now view our flagship as a hospitality business just as much as it is a retail store. From product launch events and parties to liquor tastings and group runs, 3sixteen NY has become a hub for people who share interests to meet up and build community together. For the next month, Wilsons will serve as a further extension of that same spirit.

Service begins on Monday, September 18th from until we conclude on Sunday, October 15th. If you’re visiting NYC during that window, please make us a stop on your travels. And if you live here, come by and meet a friend or take a work call on our bench. We look forward to seeing you here.
